I have been diggin' (literally though) all kinds of creamy creations and I invite you to join me!

(You know you wanna... it's delicious over here!)

I forgot about the dip-life until my friend who makes non-GMO tempeh started making tempeh chips and turned my world upside down. (Don't worry, this is a BYOC situtation!)

It's been almost four months for this gal with no potatoes or corn so... what the heck else is left to dip with? Ya... I almost forgot about the glorious experience of having a part of my food lift the other food into my mouth...

Well anyways, I'm back in action and I think you're gunna love this dip because it's cheap and easy and it's sooooo soooo good!

Note: This really should feed more than just one person (cough 3)... but I am not going to judge. :)


What You Need:

  • 2 cups of cooked millet (don't knock it til you try it!)
  • 1 cup of cooked kidney beans (or whatever beans you want!)
  • 2-3 medium tomatoes (sliced thinly width-wise)
  • 1 tsp paprika
  • 1/2 tsp pink Himalayan sea salt
  • 1/2 tsp black pepper
  • 1 red bell pepper (sliced thinly width-wise)
  • 3-4 garlic cloves (minced)
  • 3-4 shallots (minced)
  • 1 tbsp olive oil
  • chives

Sauce:

  • Optional: Baba ghanoush (eggplant sauce)
  • Hot sauce
    Note: to be honest, the sauce was extra! The tomatoes do bake into a sauciness of their own so if you don't have these you can sub out for your fav sauce! Hummus would be perfect!

What To Do:


  1. Preheat the oven to 350'F
  2. Mince the garlic and shallots and set them aside
  3. Slice the tomatoes and bell peppers and set them aside
  4. Oil a baking tray with the olive oil and pour in the cooked millet and kidney beans (you can separate them or have them mixed together.)
  5. Next, make a layer of the tomato slices on top and sprinkle some of the minced garlic and shallots on it as well as the salt, pepper and paprika
  6. Follow up with a layer of the bell pepper slices sprinkle some more garlic and shallots on this layer as well
  7. Drizzle some olive oil on the top and put in the oven for about 15 minutes
  8. While it's baking, mix together the baba ghanoush and the hot sauce and after the 15 mins, take the tray out and line your dish with it and sprinkle some chives on top
  9. Put the dish back in the oven for another 5 minutes.
  10. Serve with your favorite chips!
