You made too many veggie patties, did ya?

It's my opinion that there is never TOO MANY of anything, we can find a place for anything and everything. 😉

When I was younger, leftovers was a horrible word that I dreaded the sound of but now, I praise the day I have "over-made" something so that something else can be created from them! Borrowing from the permaculture principle: "there is no such thing as waste!"

So, the other day I shared with you my delicious veggie patty party! If you missed it you can find it here!

Now those patties have no oil, they're vegan, they're gluten free and they are protein packed so I made a bunch to have on hand for easy meals (which are super convenient by the way!)

So, these patties get to have a new life amidst a smorgasbord of veggies, sauce and crispy tempeh and sunflower seeds! What a life!

We waste SO MUCH FOOD that it hurts my heart so in honor of Earth Day (and every day) I say...

Make Your Leftovers Great Again!


What You Need:


Base:

  • 1 big bunch of spinach (chopped)
  • 1 cucumber (coined)
  • 1 cup cherry tomatoes (halved)
  • ½ red bell pepper (diced)
  • 1 avocado (diced)

Skillet:

  • Veggie patties: click here for the recipe
  • Spinach stems (don't throw those away from above, they are super nutritious!)
  • 1 package of tempeh
  • ½ tbsp coconut aminos
  • ½ tsp smoked paprika
  • ½ tsp pink Himalayan sea salt

Dressing:

  • 2 lemons (juice only)
  • 3 tbsp tahini
  • 1 tsp cajun spice
  • 1 tsp black pepper
  • ½ tsp pink Himalayan sea salt

Toppings:

  • Sauerkraut
  • Roasted sunflower seeds

What To Do:


  1. In a skillet on medium heat with a touch of coconut oil, heat up the already prepared veggie patties with the spinach steams, tempeh, coconut aminos, paprika and salt. Cover and leave on low heat while you move on.
  2. Cut up all of your veggies for the base and set them aside in a big bowl.
  3. Juice the lemons and mix together the tahini and the spices with the juice and a bit of water until you get the consistency you love. Set aside.
  4. Once your tempeh is cooked and your patties are warmed up, set them aside to cool down for a couple of minutes.
  5. Arrange the bowl however you feel inspired! Toss in the raw ingredients, the warm ingredients and pour the sauce and toppings all over it!
    Enjoy!

There you have it, now your container in the fridge or the pieces that everyone was too stuffed to finish the night of, have become another amazing meal, cooked by you!
