Rice is a part of every families in the Philippines. As a matter of fact, when you went in any asian countries, they will often served or offer you a meal with rice. This is were we get a lot of carbs anyways.
Putong Bigas a filipino version of rice cake. Some recipes combine flour or even cooked rice for this. But this time, I wanted to try for myself if I can do it using rice alone. One thing to add, banana leaf serves as the puto liner or the cake liner.
This is a kind of native delicacies that usually served as snack or in breakfast. Because of the rice, it is a good source of energy as it has carbohydrates.
For todays recipe, I will be sharing how I did rice cake or putong bigas the easiest, fastest at most affordable budget. Just prepare the following.
Ingredients:
2 cups regular rice
1 cup or less rice water reserved
⅓ cup sugar
Here's how:
1.Wash the rice twice. Soak it overnight.
2.Dissolve 1 tsp of yeast in lukewarm water. Allow to bloom to see if the yeast can be use.
3.In a blender or food processor, pour the rice and add some reserved water around 1 cup and ⅓ cup of sugar.
4.After several minutes, add the yeast mixture into it and blend again. Leave it for 1 hour to start the fermentation.
5.Grease puto molder and pour in the puto batter. Steam for 10-15 minutes over low to medium heat.
6.Check it with a stick to see if it's ready. Allow to cool and serve with brewed coffee. Enjoy!
You actually taste the grain of ground rice and it is a heavy snack for everyone. It's kinda sticky and has a distinct smell maybe that is coming from the yeast.
Maybe that's the reason why some recipes replaces the yeast with baking powder. Anyways, this is not a bad result for a beginner like me. I hope that you could also try this at home.
