I'm not so sure, Kirk. While I think keto's a good way to go, I think 2 things are against it: One, it's very different from a "normal" diet, at least in the US. Stuff that's way off the beaten path tends to not do so well. While it might enjoy a temporary spike, I don't think we'll see long term compliance. The second reason I'm not sure keto will skyrocket is the reliance on "replacement" sugars for so many people. Whether it's stevia, erythritol, or monkfruit extract, at the end of the day they're all reinforcing that "sweet" habit, which is something you've got to be really on top of if you're trying to wire in a healthy diet.
You make some very good points. I definitely stray from it more than I would like to admit. I think once companies start making more keto friendly meals and foods, like they have done with paleo over the last couple years some of those hurdles will start going down. That is when adoption will be greater among a more general population and it will take off. Give another couple years
