I cook for my mom who is diabetic. I find that some paleo recipes are good for people with diabetes (low carb). I really like using almond flour and coconut flour to bake which is in a lot of paleo recipes. I personally don't enjoy a lot of the food because I'm picky but my mom seems to enjoy paleo a lot.

Yep, you've got to be careful with a lot of the paleo recipes out there, as paleo isn't specifically a diet about low carb (although that's probably a healthy way to interpret it.). Careful with the almond/coconut flour replacements, those can trigger some immune issues if you're eating nuts too much. Occasionally and/or low dose is fine. That's the hardest hurdle for most people: Making the transition "translating" their old diet into Paleo over to actually eating a Paleo way. Check out some of the work on intermittent fasting, might be useful. Are you doing buttered coffee? We've found that's pretty amazing. Of course, we're part crazy. :)
Oh I know. I do a lot of research finding the low carb paleo recipes. I might tweek them a bit to fulfill the low carb need. A lot of paleo recipes provide me with a good base to come up with new recipes to fit my families needs. I haven't heard of buttered coffee but I'll give it a read. Thanks.
