The perfect recipe for the perfect pancakes

Since it was the weekend today, I decided to treat myself to a breakfast I really enjoyed as a kid and while I was growing up. Pancakes! Warm fluffy pancakes with fruit toppings and maple syrups are all you need to kick-start your day. These ones are delicious, soft and really light in their texture so much so that you can’t stop yourself from devouring the whole pile away! ( I ate 4 today and am not at all sorry for my diet lol. )

The recipe that I will be sharing with you was followed by a chef on BBC food whose name I can’t seem to recall even after all these years. If you happen to know who I’m talking about, please do leave a comment below. It happens to be the first recipe that I followed as a kid in my kitchen and succeeded at. So, yes, it is special to me.

This recipe is unlike any other that you will find on the internet and without using baking powder or soda you will actually manage to get perfect pancakes in no time at all.

So not wasting any more time, ill start with the ingredients that you will need to get started. This particular recipe will yield two pancakes. You, however, can always build on it to increase the quantity.

Ingredients:
1 egg (separated)
2 tbsp yogurt ( greek is preferred)
2 tbsp plain flour
2 tbsp sugar ( I use 1 tsp honey instead)

Method

• Start by heating a non-stick pan on the stove while you prepare the batter.
• The first step will be to take two clean bowls and separate the eggs. Since it is just one egg white we are talking about, a little effort and you will be able to beat perfect stable peaks without using the electric beater I’m sure. So, take on the challenge and beat the white the traditional way by using a fork. Once done, keep it aside.

• In the other bowl ( the one with yolk) mix all other ingredients and beat them up lightly to combine them together.
• Now slowly fold in the whites. Do not rush this step as it can make or break your pancakes.
• Once done, take a ladder spoon and carefully drop in half of the mixture on the pan in a circular shape. I prefer sprinkling a few chocolate chips on the top while it is being cooked to treat myself :D
• Let it cook slowly. Once you see bubbles forming on the top, gently flip it over and wait for the other side to turn golden brown as well.

Make the other pancakes in the same manner and take them out on a plate. Serve with some fresh fruits and maple syrup on the top.

This recipe just never seems to go wrong and gives you the same perfect taste every time.
