Greetings. Buttercrunch also known as a butterhead. They do not make heads so the leaves get more build up of chlorophyll. The can have a slight bitterness, but not like some. I usually add other types of greens to my salad which some are bitter.
I have a book I was reading before we began remodeling our home. I cannot recall the name of the author, but she discussed how humans bred the bitterness out of foods. Those that have a bitter flavor are suppose to have more nutrients.

I know that lettuce fasting with apple cider vinegar is used to control insulin resistance.
I used to give my children, lettuce with honey and lemon in the afternoon.
I relaxed them.
