Ang simpleng toyo at suka na sinangkapan ng sibuyas at bawang samahan pa ng ibang pampalasa katulad ng dahon ng lawrel at paminta.Kapag pinantimpla sa karne ng manok o baboy ang resulta malinamnam na" Adobo."

Bago pa dumating ang mananakop nagluluto na ng adobo ang mga sinaunang pilipino.Katulad kase ng mga ibang bansang may mainit na klima .Para mapreserba o hindi kagad masira ang karne nilalagyan ito ng asin ,suka para hindi mapanis o masira.Noong nagsimulang makipag kalakaran .Ang mga tsino sa ating mga pilipino.Ipinakilala nito ang ilang pag gamit ng toyo bilang pamalit sa asin.Noong sinakop tayo ng mga kastila tinawag nilang "Adobos de las Naturales" or native adobo dish.Mula sa ito sa salitang kastila na "Adobar"na ang ibig sabihin "Marinate o Ibabad".
Ito ang ilan sa version ng adobong pilipino...
Ang Adobong tagalog o Adobong Puti.na ang sikretong sangkap ay sukang paumbong.ipinaghahalo ang karne ng manok at baboy bawang,asin,paminta,sukang paumbong. At niluluto sa loob ng 30 minuto.Kapag kumapit na ang suka sa karne ibig sabihin luto na.Tinawag itong adobong puti.Dahil sa maputla nitong kulay na hindi nilagyan ng toyo.
Adobo Filipino.Pinagsama ang karne ng manok at baboy.Ibinabad sa suka,asin,paminta,dahon ng lawrel,bawang,atswete.Ang estilo ng pagluto ay ilalagay sa mantika ang atsuwete at sinasangkutsa ang binabad nakarne ng manok at baboy isinasama ang pinagbabaran ng manok at karne niluluto rin ito ng 30 minuto.

The Adobo tagalog or Adobo white. the secret of this recipe is the vinegar paumbong extracted from the sap of sasa (nipa)
mixed the meat of chicken and pork, garlic, onion,salt black pepper,sukang paumbong.And cook about 30 minutes when suka started adhere to meat meaning its ready to served.Its called adobo white. because of the pale apperance without putting soysauce.
