Philosophy does not have a definition, what it has is called definitions!
Western philosophy did not begin with the Greek. Greek philosophy is just the most popular one because their philosophies were documented.
The history of philosophy of science did not start with anybody! Avoid generalization when writing philosophical discourse.
There are thousands of scholars before Plato and Aristotle. If you want to pick Greek scholars which those two are among, then the early scholars that talked on science are the Ionians.
To discuss 'science' in Ancient Greek philosophy, you have to start with Thales, Anaxemander and Anaxemenes. These are scholars from Greek that talked about science.
Please avoid affirmative terms like certainly, obviously when discussing philosophy.
