Photography Advice

I'm working on getting my BFA in Photography. I have a Canon 7D and am still getting use to it, as I went from an old Pentax camera. Is it better to take pictures in Manual all the time or is it good to use the features the camera comes with? I've somewhat learned how to use the manual to take good pictures but it seems to be time consuming to get the right pictures to make sure you have the right lighting, ISO and so on. I read the book too and that is a lot to remember. To take quick pictures like the photographers do when taking pictures of people, what is the best way to get them done right? Any advice will help at this point. Classes start up again soon and I want to get as much feedback as I can with this camera and settings, as well as what equipment is good to have and use at all times with the camera.
