Weekend breakfast is the best breakfast of the entire week. Either you're going out for brunch with friends or cooking at home, there's something so relaxed about eating in the middle of the day (for me anyway), maybe having a drink, or just feeling creative with your meal, not worrying about a thing.
This is how these fried eggs breakfast idea came to life.

Ingredients:

  • 1 round tomato;
  • fresh cilantro;
  • 1-2 tablespoons canned jalapenos (sliced);
  • a few broccoli florets;
  • 3 eggs;
  • 6-8 large shrimp (cooked);
  • 1/2 cup fresh spinach;
  • salt and pepper to taste.

Method:

As far as egg frying directions go, these are too simple to write about, place all of the ingredients on a well heated cast iron pan, crack in the eggs and cook until done. DONE.

I love spicy food and this is the main reason I decided to throw in some jalapenos into my eggs, but they are totally optional, you can add some bell peppers instead or skip pepper entirely :).

Delicious, colorful breakfast for two with a little kick! Unfortunately, I had no Mimosas or Bloody Mary's on hand to accompany this goodness, it is was still super tasty and very satisfying.

What else could you possibly wish to eat on a lazy Sunday morning?! Well, aside from bacon :D.

Enjoy!

That looks delicious, I have an addiction for shrimp as in all ways, I think it's a good recipe, all these meals are prepared by you? You are very good at what you do friend, I send you many greetings @kotturinn

Thank you!

Yup, I am the one to cook and take pictures, and oh yeah, EAT too hahaha

Hahahaha that good, you are very good at what you do @kotturinn

Thanks a lot!

I hope to be able to make dishes like the ones you prepare, here in my country the food is very expensive, a cell phone for the pictures, no matter what. I'm in love with your publications

Thank you very kindly!

Where do you live, if you don't mind me asking? Good quality food is costly here in the US as well!

I live in Venezuela, but I think that in your country it is easier to acquire them, here we have to queue to buy things and many times in the supermarket there is not what we want, like everything is worth a lot and the salary does not reach

The meals that he prepared to show them in my blog I do them with a lot of effort, with steemit I have helped a little

Ran across this article on an empty stomach....Now I'm hungry, very hungry. Looks tasty! Amazing images. Are you using natural light or setting up some strobes?

Thanks a lot! Too bad I can't share through the screen :(.

Yeah, I do use natural light! No flash!

You would be my best friend if you could share through the screen, lol.

Natural light is so cool :) Hard to fake it.

Thank you!

Looks yummy! Upvoted :)

your photos are always fantastic! Really appreciate your use of cast iron. I might have to give it a try with everything except cilantro (not a huge fan)

Thank you! I used to hate cilantro back when I lived in Crimea, but when I came to the US and tried Mexican salsa for the first time I changed my mind hahaha

We switched to cast iron about 2 years ago, pretty happy with it :)

To each their own I guess :p

Cast iron is the best. I picked up a 1920's Wagner skillet at an antique shop. Cannot recommend cast iron enough to anyone

Very true :) agreed!

This looks amazing! Now i'm hungry and i'm sitting through PYP.....

Haha thank you! Well, I hope you get to eat soon!!!

This one I'll actually try out! Looks yummee and fits my eating habits <3 Thanks!

Sounds good, I hope you like it! Thanks!

Oh snap! Another incredible looking recipe. YUM. Great inspiration for this weekend. Can’t wait to have this blog in my feed regularly.

You're too nice, thank you :)

@kotturinn - It reminds me "Tom Yum" maybe because of the egg "yellow" - was good? ;)
