The next stop on the fermentation train is Giardiniera mix, which is super hard to remember how to pronounce, and very awkward when you mix it up with gonorrhea, and then when your roommate is on the phone and trying to explain to his mother that you're making gonorrhea... it was an interesting day to say the least. Let's move on.
You'll need:
1 head of Cauliflower
4-5 big ol' Carrots
1 big stalk of Celery
1/2 of a Bell Pepper (Red or yellow, never green)
2 cloves of Garlic
1/2 Tbls pickling spice
1-2 bay leaves
1/2 tsp dill
Start by peeling and chopping all your veggies
we made these into nice big chunks
Cauliflower is one of the main veggies in this mix so you're going to want mucho.
Once you've got everything chopped up, thor smash your garlic with your awesome kitchen hammer.
And start layering
Also as you're layering sprinkle in your spices
Make a salt brine (1 tablespoon + teaspoon salt dissolved in 2 cups of water)
and pour into your jar of vegetables
don't forget the cool invisible glass weight
and leave to ferment for 4-5 days
Once it's ready you can put it on sandwiches or.... other.... Italian things... or just eat it straight up. To be honest I'm not quite sure what you do with Giardiniera. It'll be a surprise.
