Healthy dinner ideas: baked vegetables with taste of pizza

What is healthy, now a days means different things, so I better define what is healthy for me - low carbohydrates.

What you need for it? Not much, some vegetables (zucchini or yellow squash, or egg plant, or bell peepers...), cheese, onion, garlic, (home made) pizza sauce, optional is salami.

Take vegetables from the fridge. You don't have any?!? Off to the garden or to the local store. :-)
Use what you have. I had yellow squash and egg plant.
I was in the middle of preparation when I though I could take some pictures and post them on Steemit.
Here I'm already loading up on vegetables:

Use parchment paper if you hate scrubbing baked cheese of baking tray ;-)

  • Slice egg plant about one centimeter thick (around half of an inch) or so
  • Cut on half yellow squash. It helps if you trim bottoms a little bit so they are more stable on a baking tray
  • Coat tops with the olive oil. It is optional, I tried both ways and there is not much difference
  • Spread over pizza sauce. If you want to control harmful ingredients, you can try make your own :-)
  • Sprinkle seasonings, oregano, black pepper... per your taste, lots of options to change flavor here...
  • Next add (optional) salami. If you are vegetarian, skip this step of course.
  • Then add chopped onion, garlic.
  • Lastly top it off with cheese, I used shredded mozzarella.

You can see on a first picture different stages. Those black dotes are chia and flax seeds I was experimenting with.

Second pictures shows dish ready for the oven, 375 F (190 C) for 45-50 minutes

Of course, there are many different options you can try. For example, instead of pizza sauce, you can use salsa. Just by changing seasoning, you can have very different flavors without extra work.
