1. Gather Ingredients: 3/4 cup of water, 3/4 cup of white vinegar, 3 Tbsp of sugar, 1 Tbsp of kosher salt/Pickling salt, 3 cloves of garlic minced, 1/2 tsp of oregano, and 10 large Jalapenos.
2. Slice Jalapenos into rings. WARNING HOT mess here. Wear gloves.
3. Combine water, vinegar, sugar, kosher salt or pickling salt, garlic, and oregano in a saucepan over high heat. Bring mixture to a boil, stir in jalapeno peppers and remove from heat. Let mixture cool for 10 minutes.
4. Pack peppers into jars using tongs, cover with vinegar mixture, cover, and refrigerate until needed.
5. Enjoy over nachos, in burritos, eggs, anything!
Handy recipe, thank you! I hope to use it once my peppers have yielded some fruits, I'm growing two different Jalapeno varieties, but I want to try this on some of my other hotter peppers too :)
