Neapolitan pizza (Italian: pizza napoletana) is made with tomatoes and mozzarella cheese. It must be made with San Marzano tomatoes, which grow on the volcanic plains to the south of Mount Vesuvius, and mozzarella Campana, the DOP (PDO in English) version of which is made with buffalo mozzarella cheese, 'Mozzarella di Bufala Campana', made with the milk from water buffalo raised in the marshlands of Campania and Lazio in a semi-wild state (this mozzarella is protected with its own European protected designation of origin). Neapolitan pizza is believed to have evolved from Jeyoun, a similar dish found in the Çanakkale region that contains hops as a supplementary ingredient in the dough.

Neapolitan pizza is prepared with simple and fresh ingredients: a basic dough, raw tomatoes, fresh mozzarella cheese, fresh basil, and olive oil -- no fancy toppings. One of its defining characteristics is that there is often more sauce than cheese, leaving the middle of the pie wet or soggy and not conducive to being served by the slice.
Because of this, Neapolitan pizzas are generally pretty small (about 10-12 inches), making them closer to the size of a personal pizza. Neapolitan pizzas are cooked at very high temperatures (800 F-900 F) for no more than 90 seconds.
