Never tried fish jerky, it's laborious with a long smoke process. This shit is easy, my sisters a beef farmer and we get our roasts cut into "stir fry" pieces. Just marinate and hang on the line. I made mine Tex mex using taco spice, my wife does a yellow chilli flake and her parents opt for plain.
