Brewing my own Kombucha at Home!!
The past two Saturdays, I visited the Bus Stop 7 market, which I wrote about for #MarketFriday as hosted by @dswigle.
I bought quite a few items at the market and one of the things I bought was a SCOBY!! SCOBY is short for Symbiotic Culture Of Bacteria and Yeast.
A SCOBY is needed to brew Kombucha which is a fermented health drink. You can read more about Kombucha by following the link.
Below is a photo of my SCOBY.
To make Kombuch you need the following:
- 6 x litter Water
- 8 x Black Tea bags
- 1 x cup of Sugar
- 1 x SCOBY
- 2 x cups starter Kombucha
- A jar to ferment the tea in.
You can brew more or less Kombucha at a time, but this is what I used.
Basically, you bring your water to a boil, add the 8 teabags, let it stand for about 5 minutes, remove the teabags and add the sugar.
The tea must then be cooled down to room temperature. When it is cooled down, you can pour it into a large glass jar and add your SCOBY and starter Kombucha. The mouth of the jar must then be covered with a cloth or paper towel, in order for the SCOBY to breathe, but keeping unwanted things out at the same time.
Below is my jar in which I am brewing my Kombucha, this is before the SCOBY was added.
I have now placed the jar, with the SCOBY added in a cupboard, where it should stay for about a week. This is the first time I am brewing Kombucha, and I hope everything will turn out well!!
Kombucha is not a sweet drink as the SCOBY feeds on the sugar and not much is left after the process is completed. The SCOBY can be used over and over, and in actual fact growths over time and can be divided to give more SCOBY's.
Kombucha can be drunk just like it is or, one can add some fruits and herbs for some added flavor.

They say it is very healthy, I will give it a try.
I have and I learned a lot too! I did know the basics of making Kambucha, but, actually didn't know that it could be divided and given a new life elsewhere.
Can I use any black tea? What other teas have you had that you enjoy? I think fruit in it is a nice touch, along with a few herbs.
Now, the only thing I need to do is find a starter kit, which I will be looking for on the internet, of course. :) I am dead certain my Market doesn't have any. Pfft.

I am new to this, but as far as I know one can use any black, green or white tea. (I actually don't know what white tea is, I need to google it). I am not sure if herbal teas can be used, I will give it a go, once I have a few Scoby's.
(The people where I bought the Scoby, was actually only selling Kombucha and Kvass, but I asked them if they do sell Scoby's and they said they actually do and brought one for me the next week.) You should also try to make Kvass (the rye bread one), it is quite easy and very tasty and apparently also very healthy.

Always wanted to do this. We got everything ready and will give it a go when the temperature is cooling down a bit :D Funny to know you can find scoby at a market where you live. I need to order them online
I took a chance with the people, they did not have Scoby's with them at the market,they only sold Kombuch and Kvass, but I asked them and then the said, that they do sell Scoby's, and that they will bring one for me the next Saturday. I am almost ready to try my brew, should be ready by Saturday, I cannot wait.

Wow I have not seen this in many years, I used to use them and for the life of me cannot remember the recipe or how I did it back then, it was quite the rave about 30 years ago.
Nice to look into this again, my original one eventually went moldy and I did not know to split, learn something new and healthy thanks @rynow
