Hello @amy-goodrich, nice to see you and your recipe, it's useful for many. My cousin used to do this from time to time as she's lactose intolerant and can't drink milk. I tasted it once but it was too sweet to me as I'm used to real milk, which is not so sweet. Anyway, the pulp (as you say) can be used as flour for pastry, it's very good, Italians are using it regularly.
