Hello everyone! For today's Tasty Tuesday is something special and I would like to share my Deep Fried Chicken for Antonia's 11th birthday. She likes to eat chicken joy so I told her that I'll make a one whole Chicken Joy as my birthday present.
As shown above, here's how I prepared it instead of the usual fried chicken recipe:
DEEP FRIED CHICKEN
- First, I thoroughly cleaned the one whole dressed chicken then placed it in a casserole with water just enough for the spices to absorb.
- I only added salt, bell pepper, spring onion and seasoning to taste. The main purpose of this is for the spices to absorb the internal parts. Boil for 30 minutes. Do not overcook.
- Next, drain the chicken but do not throw away the boiled water. Set aside for other menus.
- Marinade the drained chicken with minced garlic, soy sauce and a portion of vinegar. You may add a stick of lemon grass to enhance the flavor. Let it soak for 15 minutes.
- Place enough amount of vegetable oil in a deep fryer.
- While waiting for the oil to be heated, slowly massage the chicken skin with flour or corn starch. This process will prevent the skin from sticking and at the same time, it will make the skin crispy. All you need to do is deep fry until the skin is brownish and crispy. You may sprinkle some water while frying for a crunchy effect.
- Strain the fried chicken in a colander to drain the remaining cooking oil. With this procedure, you won't doubt a bit as to whether the internal parts was cooked since the meat was pre-cooked.
- CRISPY VEGGIE SPRING ROLLS
This recipe is quite simple. You need the following:
- 1/2 kilo meat
- 1 bulb onion
- 2 carrots
- 2 bell peppers
- 1 clove garlic
- Salt and seasoning to taste.
Here in our place, I do the marketing in our wet market where you can buy the things listed above. The meat dealer will do the honor to clean those stuffs and grind it all in one setting. I also preferred to add vegetables so I included the following:
- 1 Chayote (pear squash)
- 1/2 kilo potatoes
- 1/2 kilo green beans
- Green peas
- raisins
- cheese
- 1 pack crab n corn powder
- 100 pcs spring roll wrappers
All of the above veggies should be sliced in thin cubes.
- To start with, the mixed ground meat are sauteed in gradual manner to be followed by mixed veggies (half done only).
- Lastly, add raisins, green peas and cheese.
- DO NOT ADD WATER.
- Spread the wrapper and place about 1 tablespoon of cooked veggies and wrap accordingly then place it in a rectangular container.
- This should be the last menu to be fried before the table setting to maintain its crispness.
Note: You can also use mongo sprouts with the mixed veggies.
GAMBAS (SHRIMPS) You need the following:
- 1kilo large shrimps
- Garlic
- Onion
- Bell peppers
- Red tomatoes, diced
- Gambas powder or crab n corn powder (mixed over 1cup ofl water)
- salt and seasoning to taste
Saute spices and shrimps in few minutes only then add gambas until gravy. Serve hot.

I prepared these menus the whole day for dinner. I also prepared Tuna-Macaroni salad and chicken joy which is simple to prepare as well.
