Mapo Tofu with eggplant🍆! & D-12 for Steemfest!

I made a Chinese style Mapo Tofu with eggplant! I'd love to have a healthy vegetarian meal these days but still, I needed pork for mapo tofu! So, I went to the super market, but they didn't have any meat!! Is this some kind of sign from god that I shouldn't eat meat??

Anyways, I skipped the meat and put some eggplant instead! Do you like eggplant? I really like it as much as the meat!

Let's make sauce first! Add oil on the pan and stir the eggplant. If you're gonna use meat, please stir the meat at this time. Then add 2 tablespoons of tobanjan, 1 tablespoon oyster sauce, 1 tablespoon soy sauce, 1/2 tablespoon chopped garlic, and 1/2 tablespoon chopped ginger. Then add 300cc water and boil it.

Cut the tofu to the small size and put 1/2 tablespoons of salt in a pot and water and boil it. This process will help removes unnecessary moisture from the tofu and makes the tofu hard.

When the water starts to boil, please throw away the water and put it in the sauce !

Add chopped green onions. And then put the starch water little by little and make the sauce more thicker.

Now I have 12 days to go to Portugal for the Steemfest!!! Time is really fast, isn't it? As the date approaches, I am super excited, but at the same time I am getting nervous too!! haha

Ohh wow that looks delicious, I love eggplant. I will try to make it. One question what is tobanjan? I can find the other ingredients but I have never heard of tobanjan before.

I do not eat meat very often. I like eggplants because they are simple to prepare and are very tasty.

Although there are 12 days to Steemfest, I wish you to have fun and take care of yourself. I can not wait to see pictures :)

Yes join the vegetarian team eeheheh I have become vegetarian for moral and ethical reasons. cause the food industry is fucked up. but more important than just becoming vegetarian is to make sure that the products you get coming from a supportive industry that doesn't destroy our planet. Nothing wrong with eating meat. It is just the way it is produced and the whole cruelty and wastage behind the industry. :P but your meal looks delicious.

This looks great, I've always wanted to learn how to make mapo tofu! Can I ask, what is tobanjan? Is that the little red jar next to your oyster sauce? I am sure I've seen it here in Sydney but ours usually has the English translation on the label too...
