Hello! Today I will show you how to prepare a Fraisier, this cake is original from France consists of two layers of a genoise (spongy) cake soaked in syrup filled with a mousseline cream with strawberries and topped with marzipan or almond paste.
For the genoise cake we´re going to need:
8 eggs (separated into yolks and whites)
1 cup + 2 tablespoons of sugar
1/2 cup + 2 tablespoons of butter (melted)
1 1/2 cups of flour
Preparation:
- Pre-heat oven to 350F (180°C)
- Beat the egg whites then add 3/4 cup of sugar and keep beating
- Beat the yolks with the rest of the sugar
- By hand, mix both mixtures
- Take 1/4 of the mix and separate it, then add the melted butter
- Mix it al and add the flour
- Bake for 10 minutes
- When cool, we´ll cut it in half
For the mousseline cream we´re going to need:
for the custard:
6 yolks
100 gr (3 1/2 oz.) of sugar
500 ml of milk
40 gr (1 1/5 oz.) of cornstarch
1 or 2 teaspoons of vanilla
later we´ll add:
330 gr (11 1/2 oz.) of butter
a little bit of liqueur of your preference
600 gr (21 oz.) of strawberries
Preparation:
- Mix the yolks with the sugar and the cornstarch
- Heat the milk until it is just about to boil
- Mix the yolk mixture with the milk and cook slowly
- Beat until the mixture is thick and has a good consistency *
- With a beater we mix it at high speed with half the butter until its homogeneous
- Chill for at least 25 minutes
- After chilling we beat the other half of the butter and the liqueur
*at this point, if we´re only making the custard we put cling film so that it touches the custard and chill it until we use it
For the syrup we´ll need:
150 ml of water
50 gr of sugar
liqueur of your choice
Preparation:
- we heat the water and sugar until it dissolves
- we add the liqueur and let it cool
For the almond paste (marzipan) we´ll need:
100 gr of almond ground
100 gr of powdered sugar
30 gr of glucose
15 gr of egg whites
red food coloring
Preparation:
- We mix all the ingredients until we have a paste.
- We add the food coloring.
- Between two sheets of wax paper, we roll the paste until it´s thin and then cut it with the mould
To make the fraisier we´ll:
- In a base we´ll put the first layer of genoise cake and soak it in the syrup
- We´ll cut some strawberries in half and put them in the walls of the cake mould like in the pictures
- With the mousseline cream we´ll fill the gaps between the strawberries
- We fill the cake with layers of cream and the rest of strawberries
- We put the other layer of the genoise cake and soak it
- We put the almond paste layer on top
And finally, the finished product!
