Thank you for this. I was just a little concerned that the high water content in zucchini might unbalance the recipe. Obviously not. I must give these a try though I am not awfully fond of muffins - the texture you know. I will have to play around with another recipe to get the zucchini in. Will post about it as soon as I have completed the Yeast Starter and bread postings. Not long now I hope! Will promote this on one of my posts. :)X

It's a really light texture and very moist, everyone I've tried it out on was pleasantly surprised! x
