Bengali niramish alur dom is spicy, aromatic vegetarian potato curry. This is a sattvik recipe (which excludes onion and garlic). While the rest of the world is only content with their French fries and mashed potatoes, we Indians have advanced leaps and bounds in cooking our beloved alu. I think the best example of how grand a dish can be created with some simple potatoes is alur dom. This niramish alur dom uses simplest of ingredients and delivers a dish coated with a spicy thick gravy which tastes amazingly good with parantha ,poori or fried rice. It pleases all, economical and quick to cook. Alur dom and fluffy luchi goes so well that it almost become a single dish by themselves. It’s a must have for every occasion from family get-to-gather, picnic, weekend breakfast or even after a fasting.

INGREDIENTS for ALUR DOM:

Dried red chilies-1 piece

Cardamom-2 pieces

Bay leaves-1 piece
Asafetida-1 pinch
Clarified butter-5 gm
Salt-5 gm
Sugar-5 gm
Tomato-90 gm
Coconut-20 gm
Cashew-10 gm
Curd-50 gm
Turmeric-5 gm
Red chili powder-5 gm
Kashmiri red chili powder-5 gm
Cumin powder-5 gm
Coriander powder-5 gm
Garam masala-3 gm
Coriander leave-10 gm
