Tofu Tuesday: Silky Chocolate Mousse

This Tofu Tuesday I wanted to give you something sweet. It’s my quick go-to dessert that my kids love. You can also use this a frosting for a cake if you would like.

Ingredients:

1 1/2 cups of semi-sweet chocolate chips (I use the Enjoy Life Mini Chips as they are dairy, nut, and soy free)
1 package or 12 oz of silken tofu
2 tablespoons of maple syrup
1/2 teaspoon of vanilla extract

Directions:

First, melt your chocolate. You can do this by either creating a double boiler on your stove top (taking a pan adding in about 1 inch of water then placing a bowl on top with chocolate inside. Start your heat at medium to low heat.) and melt chocolate till smooth. Or what I do is place in a microwaveable bowl set for 30 seconds and hit start. Pull out stir the chocolate chips and repeat till chocolate is smooth. (This usually takes about 1 minute and 30 seconds for me).

Place melted chocolate and remaining ingredients into a food processor and blend until smooth. Place into a container and into the refrigerator for 1 to 2 hours or until completely cooled. (Do not do this if you are using for frosting. Once blended frost your cake). Serve when ready. For mousse it serves around 12 people for the frosting I’d say about 2 cups.
