Ignore the FUD No Bake Blueberry Cheesecake

Sooo... How insane was yesterday?!! πŸ₯΄

Bear markets don't usually phase me since I'm a HODLer not a trader and my portfolio is earned not bought (thank youuuu HIVE βœ‹) so the mentality has always been ~ I'm grateful whether the price is up or down.

But recently we've decided to invest our hard earned into the game and well... From an investor's perspective, f.me that was a rough 24 hours.

Even though we have always purchased in the red, the fact that the prices (and our portfolio value) kept dropping really made my heart palpitate and my eyes water, especially since I bought a considerable amount in the weeks leading up to the great blood bath.

Me yesterday afternoon... A small shot of soju to calm the nerves...

We set up the laptop next to the tv so we can keep an eye on the market, which seemed like a good idea at the time, and kinda still is, but it doesn't help with the FOMO so I had to distract myself and figured why not make a cheesecake?

No Bake Blueberry Cheesecake

I made this on a whim on Sunday and was pleasantly surprised at how well it turned out.

A packet of Oreos, a slab of cream cheese, frozen blueberries, a bit of butter and sugar to taste and off you go!

What's even better is it's no bake and you don't need to use any appliances unless you want to.

What you'll need

It's a slap together cheesecake so I didn't follow a recipe I just winged it, but for the sake of this blog here's the general ingredient guide.

THE BASE
1 packet of original Oreos (crushed/ground)
2tb melted butter

THE FILLING
1 cup blueberries (fresh or frozen)
1/4 cup granulated sugar
2tbs water

1 250g packet of cream cheese (room temp)
1/4 cup icing sugar

More blueberries

METHOD
Put blueberries, granulated sugar and water in a saucepan and cook on low (for fresh) or medium (for frozen) for 10-15 minutes or until cooked and mushy.

While the blueberries are cooking crush the oreos.

You can either empty the packet into a large ziplock bag and smash with a rolling pin, or put the oreos in a food processor and let that do the work. Once they're crushed, pour into the melted butter bowl, mix thoroughly and divide into container(s), then place containers in the fridge/freezer.

While the base and the blueberry mix is cooling mix the cream cheese with the icing sugar until smooth. You can use a hand mixer or a spatula for this.

Once smooth, add the cool blueberry mix. Mix together and if you want add more blueberries go for it!

Pour or pipe the filling into the containers, place in the fridge to cool and that's it!

NOTES

FOR THE BASE
The rolling pin method works well and depending on how thorough (or not) you are, you could end up with chunky bits of biscuit in your base. Using a food processor will give you an finer crumb.

You can add more butter and press down to make the base more solid. I prefer a more crumbly base and I found 2 tbsp of butter and a light pat down on the base did the trick.

THE FILLING
Make sure the filling isn't too runny. This may require longer cooking time.

To cool down the filling quickly, add more frozen blueberries πŸ˜‰.

You can totally skip all the sugar, or add more sugar, all up to you and your tastebuds. I have a major sweet tooth so make sure you taste as you go just in case my mix is too sweet for you.

Most importantly, πŸ‘‰πŸ‘‰ YOU HAVE TO πŸ‘ˆπŸ‘ˆ Make sure that cream cheese is at room temperature and you mix it together so its smooth BEFORE you add the filling otherwise you'll end up with clumpy cheesecake like I did.

IN GENERAL
This recipe yields 4 small, yet decent size, serves. I actually used 4 scotch glasses the first time I made it.

The pictures in this recipe is x2 of the ingredients listed, which fit into 2 small pyrex containers.

I like to add more blueberries in the mix before I put it in the containers, and then more blueberries on top before serving.

This took me roughly 1 hour to make, but I reckon could be made in 30-45 minutes without a toddler.

It's a seriously easy, awesome, on the fly dessert that even Hubby liked, and he doesn't usually like desserts.

It was a good diversion and an even better nerves smoother for when the market is crashing and you needed to HODL, and not get swept up and buy too early because the FOMO is strong.

I managed to restrain myself and wait for BTC to bottom and buy then. I shocked myself. Then I got too greedy and waited for it to bottom more which it didnt and missed out.. πŸ™ˆ

Ohh well!! At least I managed to snap up some bargains and improve my DCA πŸ’ͺ and now I HODL. πŸ’Žβœ‹βœ‹πŸ’Ž
