Flambéd Pear Stuffed Pork Fillet w/ Creamy Blue Cheese

I was sitting at a friend's house... it was a little chilly outside, so we were sitting at the kitchen table, enjoying an Irish Coffee or two. I was staring at her pears when it struck me... I haven't done a recipe with pears before!.

We came up with a few stupid ideas, and some downright boring... but the idea of a fillet stuffed with pears and using a creamy blue cheese to break the sweetness sounded delicious.

Flambé Pears

Butterfly Fillet

Stuff Fillet

ready for the grill

What you'll need for the Recipe

-Pears
-Sugar
-Brandy
-Cream
-Blue Cheese
-Pork fillet
-Olive Oil, Salt & Pepper
