But I'm not going to cheat on my I also like some fast foods so as I'm a chef and nutritionist I prepare my own versions at home.
Today I bring you one of those versions: Burritos of ground beef with arabic style. You will see that despite having almost all the characteristics of a fast street food, it is balanced and healthy ideal for the whole family .. . Good here we go!
His recipe has two important parts one is the preparation of flat bread, but do not panic is very easy and the second part to make the meat that goes into the Burrito filling.
Although at first it seems like a lot of work, these breads are really fast, it only takes 5 to 7 minutes of kneading and 30 minutes to wait for the yeast to do its job. The ironing of these loaves in less than 2 minutes.
You can have them ready in advance even to do for several days by keeping them in the freezer.
This time I made them in the morning to have them ready at lunchtime.
To make the bread you will need: (for 5 flat loaves of 20 cm diameter approximately)
- 250 gr all-purpose wheat flour
- 200 ml water
- 1/2 spoon of yeast (7gr)
- Pinch of salt
Before making the bread you should prepare the yeast using a little of the water in the recipe that you should heat just a little more or less 37 to 38th place a piece of flour or sugar and the teaspoon of yeast. Let stand 15 minutes in a place that does not give cold or drafts (I put it in the microwave).
Then place all the flour on the work table, make a volcano and empty the yeast preparation and the rest of the water in the center little by little. Unite everything very well and knead the dough bun about 5 to 7 minutes.
Place the dough bun in a container covered with plastic and let it rise for at least 30 minutes in a warm place without air currents (I use the microwave once more for this).
Now divide the dough into 5 portions of the same size, make a little ball and let it rest for 5 minutes.
Then with the help of a rolling pin, shape the loaves into a round shape (it does not have to be perfect) but flatten as much as possible.
Place the bread on a hot plate more or menios 1 minute on each side.
Place them in a dish with a cloth and cover to keep soft and warm until complete the cooking of all the breads. Reserve until the time of use wrapped in the cloth and in a place free of drafts.
Ok and with your ready bread we prepare to make the filling of our burritos and the salad with which we will accompany him.My healthy trick in these burrito as we will have some fat (not much in reality, but if more than I usually consume) part of the filling and salad is the use of many vegetables because the fiber it contains helps metabolize better the grazas and also to balance the glycemic index in blood, besides that they provide us with many vitamins and minerals. I use lean meat and obviously bread made at home with little salt without additives or preservatives.
To make the ground meat and the rest of the filling you will need: (to make 4 to 4 burritos)
- 250 gr of ground beef or any other of your preference.
- 1 Zzuquini.
- 1/2 onion
- 3 garlic cloves
- 1/2 red pepper
- Fresh or dried thyme
- 1 teaspoon of English wine sauce and another of soy sauce.
- Salt and pepper to taste
** The stuffed vegetables: ** - Tomato
- Lettuce
- Cucumber
- 2 potatoes
- 1/4 cabbage
- 1 Carrot
- Cilantro
** For the adrezosos: ** - Mayonnaise (if it's homemade much better)
- toamte sauce
- Vinegar
- salt and pepper to taste
- To cook the meat, cut the onion, press the garlic and sauté in a little oil until the onion is tender. Add the meat and sauté until it changes color. Add thyme, English wine sauce, soy and salt. Kitchen for 5 min. Then add the zucchini and the grated pimento. Cook for about 10 minutes. Reserve until the moment you put together your burritos.
Wash and cut all your vegetables for the filling and the companion salad: lettuce, tomato cucumber, cabbage and carrot and reserve in the refrigerator until the moment of assembling the burritos.The last thing I cook are the fries and I'll give you how I do them. Since I place them inside the filling for 2 reasons: the first one is that when filling the filling, less fried potatoes are consumed, that is to say less frits than if we use them as a contour of the dish and the second is because with only 2 potatoes small we make from 4 to 5 burritos, which translates into less calories per porcuión, this way I feel calmer to use the mayonnaise of the salad and everything is delicious and without exaggeration in anything but everything at once .. Key is balance and a little common sense when it comes to enjoying this type of food.
To make your own chips. Slice the potatoes with a bandolina or with a rallo so that you have thin slices. When you stack them and make cuts along very thin strips too. Heat oil without reaching aumear and frie until golden brown and crispy. Place them on absorbent paper to remove excess oil.
We are almost ready to taste the delicious burritos without any guilt ... hehehe To make the salads, you should cut the cabbage and grate the carrot and season with a little mayonnaise, salt and pepper vinegar. ahh do not forget to cut some cilantro and add this salad at the end which is super good. I prepared a little pink sauce that kechup with mayonnaise to spread the bread at the time of arming. But you can use only mustard, or some hummus of chickpeas, aubergine etc ... to your liking.
