Nyala's Spice Chicken
Ready In : 27 minutes
Can make up to: 2 servings
INGREDIENTS:
one tablespoon cajun seasoning
half teaspoon ground cardamom
quarter teaspoon ground allspice
two boneless skinless chicken breast halves
three tablespoons butter
one cup sliced onion
one tablespoon minced peeled fresh ginger
one cup water
INSTRUCTIONS:
Mix first three ingredients in small dish.
Sprinkle chicken on both sides.
Melt two tablespoons butter in heavy medium pan over medium-high heat.
Put chicken and sauté till brown, about four minutes on each side.
Move to dish.
Melt remaining one tablespoon butter in same pan.
Put onion and sauté for three minutes.
Put ginger and sauté for one minute.
Return chicken to pan.
Put one cup water and bring up to a boil.
Lessen heat to medium-low; wrap and simmer till the chicken is cooked through, for about seven minutes.
Move chicken to two plates and cover with foil.
Increase heat to boil and boil sauce till slightly thickened, for about seven minutes.
Season salt with salt and pepper.
Spoon over chicken.
