Cucumber salad "Sunamono" with sesame seeds

Ingredients:
- 2 large cucumbers;
- 1 carrot;
- 1 teaspoon of a large salt;
- 3 tablespoons rice vinegar;
- ¼ teaspoon soy sauce;
- 1 teaspoon of sesame oil;
- 1 tablespoon of sugar or honey;
- 2 teaspoons of toasted sesame seeds.
Preparation
Wash and cut the cucumbers. You can cut them in circles, or you can use a special vegetable cutter that turns cucumbers into green serpentine. Put them in a small bowl, sprinkle with salt and leave to rest for 10 minutes.
Remove the cucumbers from the bowl, remove excess moisture, which had time to stand out under the action of salt, and put it in a salad bowl.
To prepare salad dressing in a separate container mix rice vinegar, sugar, soy sauce and sesame oil. Season with this salad, stir well, sprinkle with sesame seeds and serve.
