Tandoori

Ingredients

one third cup vinegar
four cloves garlic
one tablespoon chopped fresh ginger
half teaspoon salt
one tablespoon cayenne pepper
one tablespoon ground coriander
one tablespoon ground cumin
half cup vegetable oil
two pounds thick catfish fillets

Instructions:

Combine the vinegar, garlic, ginger, salt, cayenne, coriander, cumin, and oil in a blender till you have a thick paste. Brush the fish chunks with the mixture to cover equally and place in a shallow dish; add the remaining marinade over the fish. Allow to marinate in ref at least four hours.

Preheat the oven's broiler. Place the marinated fish in a broiler-safe dish, reserving the marinade.

Broil the fish under the preheated broiler on the oven's center rack for ten minutes; turn the fish and brush with reserved marinade. Continue cooking till the fish flakes easily with a fork, about seven minutes more. Serve hot.
