Tomato Chicken
Ingredients
one large onion, chopped
four cloves garlic, chopped
one slice fresh ginger root
one tablespoon olive oil
two teaspoons ground cumin
one teaspoon ground turmeric
one teaspoon salt
one teaspoon ground black pepper
half teaspoon ground cardamom
one piece cinnamon stick
quarter teaspoon ground cloves
two bay leaves
quarter teaspoon ground nutmeg
six skinless chicken thighs
one can whole peeled tomatoes, crushed
Instructions:
Put the onion, garlic and ginger in a food processor and process into a paste. Flame oil in a large skillet over medium heat, put onion paste and saute, stirring continuously, for about ten minutes.
Combine the cumin, turmeric, salt, pepper, cardamom, cinnamon, cloves, bay leaves and nutmeg. Saute, stirring, for one to two minutes. Put chicken pieces in skillet and mix them around with the spice mixture till they are well coated.
Cook it for another four minutes, then add in the tomatoes with liquid and stir. Reduce flame to low and simmer for one to two hours, or till the oil has separated from the liquid. Mix it occasionally. (Note: If you simmer uncovered, the sauce will thicken; add water, or keep covered while simmering.)
