Indian Pancake
Ingredients
quarter cup warm water
one teaspoon salt
one pinch white sugar
four and half cups all-purpose flour
three and half tablespoons clarified butter
one egg
one teaspoon water
two tablespoons ghee
Instructions:
Stir warm water, salt, and sugar together in a bowl. Add flour in a large sized stirring bowl; work in three and half tablespoons ghee using your fingertips.
Whisk egg and one teaspoon water together in a dish; put to flour mixture. Gradually blend warm water mixture into flour mixture while kneading till dough becomes soft and pliable. Form dough into balls and let rest in a well-oiled bowl, two to three hours.
Heat about one tablespoon ghee on griddle or in a pan over medium heat; cook roti till browned, one to three minutes per side.
