Squash Coconut Curry
Ingredients
two cups diced butternut squash
one cup water
one tablespoon olive oil
one teaspoon salt
half teaspoon mustard seeds
half teaspoon cumin seeds
quarter teaspoon cayenne pepper
quarter teaspoon ground turmeric
one (15 ounce) can coconut milk
one (15 ounce) can cannellini beans, drained and rinsed
quarter cup chopped fresh cilantro
Instructions:
Mix squash, water, olive oil, salt, mustard seeds, cumin seeds, cayenne pepper, and turmeric in a saucepan; bring to a boil. Reduce fire and simmer, mixing occasionally, till squash is tender, ten to fifteen minutes.
Mix coconut milk and beans into the squash mixture; simmer till flavors blend, about ten minutes. Serve curry with cilantro on top.
