Yakitori

Ingredients
quarter cup light soy sauce
quarter cup sake
quarter cup mirin
two tablespoons white sugar
two (six ounce) salmon fillets
two tablespoons vegetable oil
Instructions:
Blend the soy sauce, sake, mirin, and sugar in a shallow dish; put the salmon fillets in the dish, skin side up. Wrap and chill for two hours or overnight.
Heaten up the vegetable oil in a wok or pan over medium-high heat. Strain the salmon and reserve the marinade. Baking pan fry the salmon four to five minutes per side, slowly putting the marinade to the pan, this will intensify the flavor and help to keep the salmon moist. Offer once the salmon is cooked through and is easily flaked with a fork.
