A delicious combination of flavors to compliment the taste of your roasted zucchini.
INGREDIENTS
4 zucchinis – sliced lengthways and halved
1 red onion – wedged
1 lemon – juiced
1 teaspoon of sumac
1 tablespoon of olive oil
1/3 cup of fresh coriander leaves
METHOD
Preheat oven to 390F.
In a roasting pan, combine zucchini, onion, sumac, and juice.
Drizzle with oil.
Into the oven.
Bake for 40 minutes.
Top with coriander and season.
Serve it up hot!
