Kale Salad massaged with LOVE
A supreme favorite in my home. Especially with children who never eat their greens and adults who have never tried the magic of Raw Kale.
I make this in large batches every two weeks depending on the company we keep and I'm always asked for the recipe, so for the sake of simplicity, my first recipe post.

Add chopped apples to a medium bowl with citrus juice to prevent browning. Swirl it around to cover the pieces in juice.
Pull kale greens from stem, chop stems, tear kale in to small pieces and place in a large mixing bowl
I prefer to use ceramic knives to protect the vitality and conductivity of the life force in food
Center yourself and with clean hands, massage kale 5-10 minutes with dressing until greens become a silky shiny green and its no longer bitter to taste, it will also reduce in volume by about half.
Add chopped apples, citrus juice, carrots, raisins and all remaining ingredients to kale base, mix well to coat all ingredients in dressing
Let marinate together at least 30 mins before eating
- I think it taste best the next day after I let it sit overnight in fridge.*
It has a multitude of expressions on my plate, the possibilities are unlimited...
Sometimes I serve it alone, topped with sunflower and pea sprouts, avocado slices, hemp and pumpkin seeds, etc or I use it as a topping on arugula or mix salad greens..
Or as a topping on my new favorite...
Sweet Potato Toast, a super easy gluten free treat!
