I still wanted to share this because it's a no-bake, easy and healthy snack and what I like about it the most, it is sweet! There is so many blog posts and You Tube videos out there, all you have to do is type "energy bites" or "energy balls" and you will be able to find it.
In most recipes the base is the same: dates, oats with an addition of shreded coconut or almonds/cashew nuts/peanuts. Then you can pretty much add whatever you want: fruits, dried fruits, cacao... To help you mix it and blend nicely, you can add a little bit of coconut oil, peanut butter or any kind of nut butter.
My struggle was that I only have a blender that is quite old (but I still love it) so it was hard to blend the ingredients so if you have a food processor or a good blender, this should be easier. If not, make sure you turn off your device and give mixure a stir, turn it on again and repeat this until you get a sticky mixture so you can shape it into small balls.
This is what I used today for my energy bites:
- A little bit less than 200g of dates, soaked in warm water for 10 minutes and pitted (I should have used all 200g but I left a few for my smoothies)
- 1 1/2 cup of oats - I put these in blender first and mix them to form an oat flour thinking it would be easier to blend everything together, didn't really work lol
- I started with one tablespoon of melted coconut oil but ended up adding 2-3 more because the mixture was too dry
- about a tablespoon of cacao powder, maybe a little bit more than that
- shreded coconut, I just dumped some into the mix but I would add less next time
After some blending, I thought it would be easier to mix everything by hand so I did that, adding some coconut oil until it was sticky enough to form little balls. You can roll the balls into shreded coconut, hemp seeds, grounded hazelnuts, walnuts...
One more thing I wish I did is adding a little bit of cinnamon, I think it would be a perfect combination. When the energy bites were done, I put the plate in the fridge so they can cool down and I just tried one - they are really nice, tasty and sweet! So for all the sweet tooth people out there, I recommend you to try making these and feel free to make your own combination with the ingredients you love!

Yummie, this is a great mixture indeed! I also struggled with my blender for energy balls, so that I switched to a hand mixer for such a recipe some time ago, which is much easier to handle.
