Ingredients for a 28 cm Ø tart:

250 g flour for dough
125-150 ml of warm water
10 g of fresh yeast / 4 g of dry yeast
1/4 teaspoon of sugar
1/2 teaspoon salt
7-8 slices of classic cheese / emmentaler / smoked cheese
4-5 thin slices ham / prosciutto cotto
1-2 tablespoons olive oil
1 teaspoon grungy salt
1 tablespoon full of freshly chopped rosemary

Method of preparation

Rub the yeast with the sugar, then mix with 125 ml of warm water (water should be slightly warm, no way hot).
Put flour in a roomy bowl, and at its center add water mixed with yeast. We start dangling the dough. When it gets a little consistency, we add the salt and continue to straighten until it becomes elastic and no longer sticks to the hands. If the dough is too dense, add about 25 ml of warm water, and if it's too soft, add a little flour, about 25-30 g.
Cover the dish with plastic food foil and let the dough go for about 1 hour or until it doubles the volume.
After the dough has grown, we divide it into two equal pieces. Lay each piece of dough on the lightly powdered table in a round sheet of about 4-5 mm thick.
Place the first sheet in the baked paper baking pan. Slice the cheese, place it over the entire surface of the sheet, then cover it with slices of ham.

Cover the ham with the second dough sheet. We push the edges of the two sheets very lightly (the sheets do not have to be perfectly bonded, so we press them very little).

With a pizza knife or a sharp knife, cut the tart into squares of about 4 × 4 cm. The cut squares must remain united, we do not separate them.
Brush with olive oil the tart and powder with grungy salt and chopped rosemary.
Bake crunchy tart filled with ham and cheese in the preheated oven at 200 ° C for about 20 minutes or until browned evenly.
