Ratatouille (recipe + photo)

One of my favorite dishes.

Ingredients:
aubergines - 700 g;
small young zucchini - 700 g;
tomatoes - 700 g;
a large bunch of greenery (I have green and purple basil, parsley);
garlic - 4 cloves;
olive oil - 2 tbsp. l.

Ideally, vegetables should be selected in such a size that when cutting, we get circles of approximately the same diameter.

For sauce:

sweet red peppers - 2 pcs .;
tomatoes - 400 gr;
onion - 2 pcs. ;
olive oil - 1 tbsp.

salt, dried herbs (I have Provencal herbs).

Preparation:

First of all, we prepare peppers for sauce. Mine and bake in the oven for about 40 minutes at a temperature of 180 degrees. The skin should blacken. We take out of the oven, put it in a bag, tie it and leave it to cool. The skin will be easily removed. We remove the stalk with the shifts and the entire skin. We cut the flesh.

Tomatoes are sanded, we remove the seeds and cut them with arbitrary pieces.

Chop onion and fry on olive oil until soft. Add the tomatoes to the onions, and after 5 minutes, chopped peppers. We extinguish 5 more minutes. Grind the blender.

Lay out in a form with high sides, sprinkle with dried herbs.

While the peppers are baked, we prepare the rest of the vegetables.

Eggplants cut into circles, sprinkle with salt and leave for half an hour. Rinse with water from excess salt, lay out on a towel, promakivaem from water.

Tomatoes and zucchini cut into circles. If zucchini are young, then they have very tender skin and can not be removed.

If the shape is round, you can be a little perfectionist and put the vegetables in a circle. In my oval, they did not want to lie in a circle beautifully)))

In a mortar mash garlic with salt, add butter, sliced ​​greens, spices to taste. A little more rubbing with a mortar

Cover with foil and bake in the oven for about 20 minutes (180 degrees). We remove the foil and keep it in the oven for about another half an hour. My ceramic form itself is warmed up long enough, so it took a little longer. See for yourself by your oven and form. Vegetables should be soft.
