Ginger Soup
Recipe Servings: 4
Ingredients
one tbsp rapeseed oil
one large onion
two tbsp coarsely grated ginger
two garlic cloves, sliced
half tsp ground nutmeg
eight hundred fifty ml vegetable stock
five hundred g carrot
four hunderd g can cannellini beans
Instructions:
Heaten up the oil in a large sized frying pan, put the onion, ginger and garlic, and fry for five mins till starting to soften. Blend in the nutmeg and cook for one min more.
Fill in the stock, put the carrots, beans and their liquid, then wrap and simmer for twenty to twenty-five mins till the carrots are soft.
Scoop a third of the mixture into a bowl and blitz the remainder with a hand blender or in a food processor till soft. Return everything to the pan and heat till bubbling. Serve topped with the almonds and nutmeg.
