One Pot Savory Mushroom Soup with Vegan Pâté.
This is such a quick soup to make, which I made for today’s lunch. It was absolutely delicious..
1 cup of cauliflower florets
2 Tablespoon of olive oil
1/4 cup of cherry tomatoes, cut in half
Salt, to taste
Pepper, to taste
1/4 cup of onion, carefully sliced
2 cloves of garlic, minced
1 cup of sliced mushrooms
1 tsp of thyme
3 Tablespoon of vegan butter
5 cups of veggie stock
1 tub of vegan Tartex mushroom pâté
Around 7 sprigs of fresh thyme
Sauté the cauliflower florets in 1 tablespoonful of olive oil till simply tender and get rid of from the pot.
Sauté the cherry tomatoes with salt and pepper to taste in the staying olive oil up until soft and eliminate from the pot.
Sauté the onion, garlic, mushrooms, and thyme in the vegan butter up until the mushrooms are browned.
Include the stock and Tartex pâté and cook up until Season with salt and pepper to taste.
Include the cauliflower florets, garnish with the cherry tomatoes and fresh thyme, and serve.
Makes 4 to 6 portions
