This recipe is for an ultimate personal or family vegan pizza. A recipe for homemade tomato sauce is also included. Manipulate this recipe to your liking.
Ingredients
1/8 cup of coconut sugar
1 1/3 cup of warm water
1 packet of Red Star Dry yeast
2 ½ cups of all purpose gluten free flour
3-5 cups of cherry tomatoes (depends on how much sauce you want)
2 tbsp. of olive oil
5 mini garlic heads, crushed
1 tsp of black pepper
1 tsp of sage
4 oz. of daiya cheese
1/3 cup of broccoli
1/3 cup of cauliflower
¼ cup of spinach
1/8 cup of fresh cilantro
1/3 cup of red pepper, diced
1/3 cup of green pepper, diced
1/16 cup of green onions, diced
Let's begin.
Put all your herbs, onions, and vegetables in one bowl. Using a mixer, gradually add 2 ½ cups of gluten free flour, 1 1/3 cup of warm water, and a packet of yeast.
Mix, Mix, Mix
I used setting speed 2 on my KitchenAid mixer. Mix for around 5 minutes, adding slightly more flour or water depending on what is needed. Drop a touch of olive oil in the flour mixture. After the mixing is complete, set the mixture in a bowl with a little flour on the bottom.
Any bowl will do.
Grab a paper towel and dampen it with water. Cover the dough with this paper towel and let it rise for 1 hour.
Time for the Homemade Tomato Sauce
Halfway through the time it takes for the dough to rise, take your tomatoes and place them in blender or food processor. Pour in a couple of tablespoons of water. Using your food processor, liquefy the tomatoes.
Then place the mixture in a medium pan, along with 1/16 cup of coconut sugar and 5 mini heads of crushed garlic. Let it simmer for around 25-30 minutes on low-medium heat.
Let’s get back to the dough.
Your dough shouldn’t be too sticky. If so, add some more flour until it hardens. This is the fun part. Start flipping and hitting the pizza dough to make sure there aren’t any air bubbles. Remember, this recipe is for thin crust so make sure you even out the dough and make it relatively thin. Then, using a pizza roller, start from the middle to help even out the dough.
Try to create a circle around the edges of the pizza and push the ends up to elevate them higher than the rest of the pizza. The pizza should look like a dish. The sides should be slightly elevated. Take your homemade tomato sauce and strain out any excess liquid. You don’t want the pizza to be soggy. Pour it evenly in your dish pizza. Finally, take a cooking brush, and brush a touch of olive oil around the crust to give it an extra sheen.
Add your veggies, some extra coconut sugar, then the daiya cheese and marvel. This is what my pizza looks like before traveling into the oven.

Preheat the oven to 350⁰ and bake for 20 minutes. Then call your friends & family and dig in!
