Pie crust:
1¼ cups almond flour
31⁄3 tablespoons sesame seeds
1 tablespoon milled flax seed**
½ teaspoon salt
1½ oz. butter
1 egg
Egg Batter:
5 eggs
1 cup sour cream**
salt and pepper
Spinach and Goat-Cheese Filling:
4 oz. fresh spinach**
2 tablespoons butter or coconut oil
1 garlic clove
0 pinch ground nutmeg**
salt and pepper
2.5 oz. shredded cheese**
Sprinkled goat cheese on top**

This morning we wanted to make it again, but we didn't have almond flour and are not bound by the keto diet right now.
Altered based on what we had:
Pie crust:
1¼ cups All-purpose flour + 1 Tbsp coconut flour
31⁄3 tablespoons sesame seeds
1 tablespoon flax seed
½ teaspoon salt
1½ oz. butter (AKA 3Tbsp) + 2 Tbsp oil
1 egg + 1 flax egg
(pie crust was too crumbly at first, but after oil and flax egg it cohered better)
Egg Batter:
5 eggs
1 cup sour cream
salt and pepper to taste
Spinach and Goat-Cheese Filling:
4 oz. fresh spinach (chopped)**
- more veggies (mushrooms, bell pepper, onions) diced and sautéed
1/4 large onion (see pics)
1/3 yellow bell pepper
3 baby bella mushrooms
2 tablespoons butter (or other oil)- for sautéeing
2 garlic clove
0 pinch ground nutmeg**
salt and pepper
2.2 oz. shredded cheese
Sprinkled feta cheese on top (pics)**
Did not blender flour mixture for dough (sesame seeds left whole)**
We'll follow with pictures of the whole process, and of course the final product >:D
But the recipe is easy to follow on the dietdoctor link. We may have done some prep different, but one of the most important things about the filling is to decrease the amount of overall moisture or else you know what might happen...
That means especially veggies need to be cooked down a bit.
Pre-baked crust at 350F for 10 minutes and baked the whole pie at 350F for 35 mins.
For heavier, try more cheese or heavy whipping cream, for more texture/diverse flavors, try more veggies! (make sure to decrease moisture!)
Add garlic
about 120g of spinach
sautéed
Have a cup of tea while i'm waiting!

A little butter and med-low heat, let the shrooms drink butter:
