Delicious Buta no Kakuni (Japanese slow-cooked Pork Belly)!

This is a recipe for a delicious buta no kakuni made in a pressure cooker to save time. You'd think that pork belly would be really fatty, but this recipe is actually quite healthy. It comes out to about 619kcal per serving. The eggs and daikon are delicious too ^_^

Ingredients for 5 servings:

main ingredients

  • 1kg pork belly
  • 5 boiled eggs
  • 3/4 daikon radish
  • some spinach
  • some Japanese mustard

for the kakuni sauce

  • 120 ml soy sauce
  • 150 ml cooking sake
  • 100 ml mirin
  • 40 g sugar

for preboiling

  • 1 tbsp rice
  • 2 leeks, green portion
  • 4 ginger slices

Preparation time: ~60 mins

Preparation Method:

  1. Trim off some of the fat from the pork belly
  2. Roast all sides of the pork belly in a pan, to brown and also to remove some more excess fat. Takes approximately 5 mins
  3. Put the pork, leeks ginger and rice into the pressure cooker to preboil. The rice helps to remove the scum and smell
  4. Meanwhile, peel the daikon, and cut into slices (kinda like in the picture), and lightly boil the spinach
  5. Once pressure cooker comes to a boil, close the lid, and cook for 20 mins
  6. To make the kakuni sauce, first boil off the alcohol in the cooking sake and mirin. Then add the sugar and soy sauce, and cook until the sugar is dissolved.
  7. After the 20 mins is up, wash the meat thoroughly, and cut into 5 pieces
  8. Now we put the meat back in the pressure cooker, along with the daikon and kakuni sauce and cook for another 15 mins
  9. Put in the boiled eggs, and cook on low for a final 10 mins
