Spicy Cheesy Pasta!!

Spicy.. Cheesy.. fantastic'y pasta!!

I love Mac 'n Cheese, I think we all have a soft spot for it. This is a turbo charged version for adults. Let's get stuck in!

You will need

250 grams of pasta. (Fusilli)
200 grams of mature cheese
Half a pint of milk
1 medium onion
3 cloves of garlic
1 scotch bonnet or habanero
1 large red chilli
1 tablespoon of plain flour
1 tablespoon of unsalted butter
1 and a half heaped teaspoons of strong mustard

To make

Boil that pasta in plenty of salted water for the recommended time. I find with your average dried fusilli it's fifteen minutes.

Chop your chillies, garlic and onion

Now give them a little fry till the onion softens

Once that's done set this aside for later

Now to make that wondrous spicy, cheesy sauce.

Put a pot on a medium/low heat and melt your butter in it

Once melted add your flour and stir it in. It will bubble up which is fine just keep stirring till the floor is 'cooked out' about 60 - 90 seconds

Add about half your milk and stir in. It should start to thicken up quite quickly. When it does add the rest of your milk and keep stirring.

After a minute or two when your sauce is thick enough to coat the back of your spoon like below..


(If your sauce looks a little lumpy fear not, it will sort itself out as we go along.)

Add your mustard and stir in.

Then bung in all your cheese and stir it in till it melts, (your sauce will look smooth)

By now your pasta should be ready so drain it.

Now back to the fun. Add your fried chilli, garlic and onion mix to your sauce.

By now your sauce should look like a heaving piece of spicy, cheesy sin. So feed your pasta into its unforgiving, fiery depths.

Dish up on plates, it should serve two and serve outside in the summer sun!!

Oh and you could serve a little broccoli with it in some outlandish nod to political correctness/health consciousness but that way madness lies :0)
