Eggs may just be the perfect food: high in protein, devoid of sugars and carbs, readily available and extremely versatile. It’s due to that versatility that I so often find eggs in the majority of my breakfasts dishes. In our household, it’s likely that we eat eggs for breakfast about 90% of the time, yet it’s rare that we repeat a meal in the same week, or month even.
