Bubble tea, or pearl tea as it is sometimes called in France, is consumed daily in Asia. You can find it quite easily in France, as an alternative to sweet coffees to take away, it is not very difficult to make it at home, and thus customize the recipe. Here is a version without milk, with fruits it is very fresh!
Small historical point before the recipe: it is not known precisely in which tearoom was born the pearl tea but it comes in any case from Taiwan and was invented in the 1980s.
Most of the time it is about A mixture of cold or hot tea and milk, embellished with tapioca beads that gave it its name. A large diameter straw is thus used so that it can be aspirated at the same time as the liquid.
In Taiwan, the drink has become extremely popular, consumed daily. The drink spread to Asia, especially in China, Vietnam, Malaysia, Singapore, the Philippines and Thailand. A drink that has become popular in the big cities of the world.
It has spread to North America and Europe, especially in large cities. In France, bubble tea is commonly found in Paris, Lille or Lyon. Its popularity is due to the playful side of the drink and the fact that it makes an alternative to sodas and take-away coffees.
Bubble tea is a blend of green tea or black tea and fruity flavors. We can add milk or not, according to our tastes and habits.
Here is a recipe for a fruity and not too sweet. The advantage of preparing home bubble tea is that you control the amount of sugar (often syrup) you put in it.
You need per person:
- Organic black tea or organic green tea according to your preferences
- Organic fruit juice preferably light enough
- Organic syrup of the same fruit or another fruit that goes well together
- 30g tapioca pearls (available in all Asian grocery stores, on the internet if needed)
- Ice cubes for a cold bubble tea
The necessary equipment is:
- A straw of good diameter
- A very large glass
- A shaker to mix the ingredients
The preparation is not very complicated. In a first step, tea is prepared: 1 dose (a ball, for example) for 150 ml of hot water. The mixture is then allowed to cool.
In a second time, we will cook tapioca pearls:
Add 30g tapioca pearls in 300ml of water, pour in when the water boils.
The preparation will cook about fifteen minutes.
Drain the tapioca beads and pass them under cold water
The mixture is then prepared:
In the shaker, pour the tea, 150mL of fruit juice, 1 teaspoon of syrup and mix with a spoon
Add ice cubes, close the shaker and shake vigorously for 15 seconds
Pour the tapioca beads into a glass, add the liquid preparation and a straw!

Yasss! This looks awesome as I'm a big fan of bubble tea but not so enthusiastic about the chemical powders used in most stores. Will definitely try this, thanks for the post!
When I made this with my mom, the tapioca pearls sometimes didn't fully expand so the inside was still hard. But otherwise, it tasted great using red or black tea.
