Pasta with tomato sauce, fresh spinach and roasted pine nuts(fun.taste.ic food #9)

You can omit roasted pine nuts if you don't like them because they have a really intense taste.

Ingredients:

  • 90g pasta (here: Wholemeal tagliatelle)
  • Rapeseed oil
  • 1 clove garlic
  • 1/2 onion
  • 1 chilli fresh or dried, sambal oelek or something other spicy.
  • 200g canned diced tomato
  • 1 handful of fresh spinach
  • 1 tsp vegetable stock powder
  • Oregano
  • Salt
  • Pepper
  • Basil
  • 1 tbsp roasted pine nuts
  • Parmesan cheese, freshly grated


Preparation:

Prepare pasta according to package directions. 

Heat some oil in a pan. Add finely chopped garlic and onions and braise them lightly. 

Add tomatoes. 

Season it with the spices and stir in the washed spinach. 

Let it simmer for a few minutes. 

Meanwhile, heat a small frying pan and roast the pine nuts without(!) adding oil. 

Serve it and sprinkle it with roasted pine nuts and some parmesan.
