Gandhi Saweetcakes

This recipe not only started my journey into a complete lifestyle change focused on nutrition but at the same time made me aware of overconsumption in everything from latest social media trends to largest plated portions. The revolution starts from within and grows with small, simple steps that make way for a better future.

This is how change is conceived; by taking a stand against mass-produced foods that dominate the average American diet and replacing them with healthier options. It's taken me about two years to perfect it but more importantly, it's given me the vision to create more delicious ideas without sacrificing nutritional value.

I'd like to dedicate this recipe to one of the most influential revolutionaries of our time and father of the Indian independence movement: Mahatma (great soul) Mohandas Karamchand Gandhi.

Dry Ingredients:

2 Cups - Oat Flour
1 Tsp - Salt
1 Tsp - Baking Powder
1 Tsp - Baking Soda
2 Handfuls - Dried Cranberries (less sugar added or with natural sweetener)
2 Handfuls - Walnuts (chopped)

Wet Ingredients:

1 Cup - Unsweetened Almond Milk
2 Eggs
10 Heaping Spoonfuls - Greek Yogurt
2 Tsps - Vanilla Extract

Cooking Ingredients:
Coconut Oil

Instructions:

  1. Heat up pan to medium-low heat or griddle to just under 300(°F) or 148(C°)

  2. Add coconut oil to the pan/griddle (more = crispy, less = soft)

  3. Mix all wet ingredients

  4. Combine wet to dry ingredients and mix very lightly. Best to use a wired mixing spoon so the texture becomes less dense, has more fluff

  5. Let batter sit either 15-20 minutes or sealed overnight in the fridge for best results

  6. Pour either into regular pancakes for practicality or into molds (coconut oil spray) for presentation. Cook until golden brown on both sides

  7. Enjoy topped with natural peanut butter and non-sugar chia strawberry jam (next recipe) or light maple syrup for a more traditional flavor

There is an alternative plain version to this recipe where I replace coconut oil with ghee and don’t add walnuts or craisins. I’ve outright replaced regular bread with these saweetcakes as they’re quick to make and quite versatile.
