One of Jamaica's most popular dishes with the mouthwatering and finger licking taste you will love. The Saltfish "run-down" gives you a Unique combination of ingredients and spices to make a great coconut creamy sauce. Perfect for a breakfast meal.
Ingredients:
1 1/2 Pounds boneless saltfish
2 Cans coconut milk (400 ml cans)
2 Stalks escallion, chopped
1 Sprig of thyme
2 Cloves garlic, crushed
2 Medium tomatoes, diced
1 Whole scotch bonnet pepper
1 Teaspoon salt
1/4 Teaspoon black pepper
1/2 Teaspoon onion powder
1/2 Teaspoon garlic powder
1/4 Teaspoon paprika
1/4 Teaspoon cayenne pepper
pimento seeds
METHOD / DIRECTIONS:
rinse, then soak saltfish in cold or room temperature water for 15 mins, then boil it for about 10 minutes.
remove saltfish from hot water and place it in a container with room temperature water to cool
Scrape the shells off the saltfish and remove bones (if there is any).
break saltfish into small pieces in a bowl.
Place COCONUT MILK in a saucepot and bring to a boil.
Add the chopped seasonings: scallion, a sprig of thyme, crushed garlic, diced tomatoes and whole scotch bonnet pepper, pimento seeds. Stir well.
Add all powdered seasonings: salt, black pepper, onion powder, garlic powder, paprika, cayenne pepper and allow to simmer for 5 minutes or until sauce thickens.
Add the broken up saltfish to the sauce. Allow to simmer for about further 2-3 minutes or until all ingredients are combined.
Serving ideas:
Serve with your favorite bolied foods and dumplin or roast breadfriut.
